The combination of spinach leaves, strawberries, red onions and a little feta and tossed with Orange Vinaigrette was an experience that caused me to actually want to eat slowly and savor every bite — and that’s something I’m not inclined to do. As I write this, I’m having a flashback to the days of spinach salads with warm bacon dressing and wondering what was that all about. Seems a tragedy to monkey with the freshness of a spinach salad, but whatever. The orange vinaigrette catapulted this salad to a new tier of freshness, and since vitamin C is reported to help the body to utilize the iron in spinach — all the more reason.
- 12 oz. fresh spinach leaves
- 1 cup fresh strawberries, hulled and halved
- 1/4 cup thinly sliced red onions
- 1/3 cup crumbled feta cheese
- 3 Tbsp. Orange Vinaigrette
Combine spinach, strawberries, red onions and feta cheese. Chill and toss with orange vinaigrette immediately before serving.
