Marinated Raw Salad

Packed with flavor and a perfect kick of vinegar and spice. As much as I love a green salad, what a pain that lettuce doesn’t last beyond a single meal. Eliminate the lettuce and you got yourself a fabulous go-to snack for a solid 72 hours or so.

  • 2  c. chopped celery (about 5 stalks)
  • 2 c. peeled and chopped carrots (about 5 sticks)
  • 3/4 c. green olives
  • 3/4 c. kalamata olives
  • 1 large red pepper, chopped
  • 1 head of cauliflower, chopped
  • 1 medium red onion, diced
  • 1/2 c. sun-dried tomatoes, sliced thin
  • 1/4 c. flat-leaf parsley
  • 2 t. dried oregano
  • 1/2 c. olive oil
  • 1/3 c. organic apple cider vinegar
  • 1 T Dijon mustard
  • 2 T. sugar
  • 1 t. kosher salt
  • 1 t. black pepper


Chop vegetables and combine in a large bowl.

Whisk together olive oil, vinegar, Dijon, sugar, salt and pepper.

Pour dressing over salad, cover and refrigerate for at least an hour.

Stays crisp and delicious as a side, salad or snack for the next 3 days.
