Blueberry, Yogurt and Beet Green Smoothie

Anna came home for lunch, and my mission was to pack a smoothie with as much goodness as possible to power the rest of her day. Thankfully, she’s on board with experimentation. Starting with about 1/2 of a cup of plain, Greek yogurt, I added ground flax, raw almonds from the freezer,  blueberries, a few strawberries, a little ice, water and beet greens. I usually don’t bother chopping beet greens for a smoothie, because I prefer to have the Magic Bullet do the work.  I would have added a frozen banana, but we were out — a situation that I try to avoid at all costs. The second a banana starts to go South, it should be peeled, sealed in a Zip Lock and tossed in the freezer. Frozen banana or no frozen banana, this smoothie managed to raise the bar for a household that’s been having lots of fun with smoothies for many years. Substantial, tasty and refreshing, I envisioned every sip of this super food fiesta immediately dispersing in the system and getting to work on some important task.

Ingredients

  • 1/2 cup of tightly packed beet greens
  • 1/2 cup of plain Greek yogurt
  • 1 Tbsp. ground flax seeds
  • 3/4 cup frozen blueberries
  • 4 large strawberries
  • 1 Tbsp. apple juice concentrate
  • 1/2 cup raw almonds (preferably frozen)
  • 1/2 cup ice
  • 1/2 cup (or more) water

Directions

Combine all ingredients in a blender or Magic Bullet. Process until thoroughly blended. Add more water if necessary to blend or achieve desired consistency.

  1. Hope this is good as the kale smoothie. I will buy beet greens next time I go shopping and give it a try.

  2. My husband has a treat in store this morning – the kale smoothie. He may be wary, as the last time I tried it, sans recipe, just on the strength of rumor – “Lisa makes this great kale smoothie!” – I used pretty much a whole bunch of kale. I basically made a smoothie for the compost pile that day.
